Production and sale of Organic Extra Virgin Olive Oil and Carpino Fava Bean
All our products are cultivated and harvested by us respecting the surrounded nature.
Our main products are the Extra virgin Olive Oil and the Carpino Fava bean, both under the Suolo e Salute Organic Certificate.
THE OIL
The extra virgin olive oil if the fruit of olive trees, the cultivar Ogliarola Garganica, in our company. During spring months, the is the pruning of the trees so they can grow strong and produce a high-quality fruit.
In winter months, from October to December, there olives are harvested: they are dropped with rakes and collected in nets and then they are brought to the nearest (100 m from our company) oil mill where they are pressed in the same day and transformed in oil.
After this process the oil is brought in the company and preserved in steel silos where it is subject to natural decantation, without taking light and oxygen that would compromise the excellence of the product. After that, it is ready to be bottled and sold.
CARPINO FAVA BEANS
It is a native cultivar, cultivated only in our territory.
It is planted at the end of November/start of December and the following work behind it is all manual. In mid-May/ the end of the same month it is harvested and tied in sheaves left to dry under the sun in the fields, after that they are crushed (Pesatura/Weighting) and ventilated, so the fava bean is separated from the plant and then it is accurately selected.
It is a legume rich in proteins, mineral salts and vitamins, moreover it contains L-dopa precursor of the dopamine used in patients with Parkinson’s disease.
In 2014, after a big selection it has been chosen as one of the main ingredients of the Legumes Soup prepared for and eaten by the astronaut Samantha Cristoforetti in the Orbital Space Station.
Our company produces also other legumes such as beans, chickpeas, chicklinks and lentils.
